What’s Megan Cookin?

Hello!   (me waving!)

 How’ve  ya been?

Good I hope!

I’ve had a few people ask where I have been, and,

well…

I’ve been around!

I’ve been lazy! It’s been 70 degrees and partly sunny here and it’s hard to be indoors. You know it takes work to upkeep this little ol’ blog.

I’ve been cooking a little but…

I’m trying to watch my calories and that means my oven hasn’t cranked out any bread or treats lately . (sniff sniff)

Yes, there has been some other things cookin’ in my kitchen but…

Either I didnt like the dish there for, I had nothing to blog about, or I did like the dish and the pictures were terrible and did the dish a horrible injustice..

Case in point: these beautiful Spring Onions.

(the ones on the left!)

Spring onions

I’m embarrassed to say, I didn’t know about Spring Onions before.  Did you? I thought it was just another name for green onions.

Scallions (aka green onions) are straight  and thin, and the little white bulb at the bottom does not bulge outward. No matter how long they are left to grow, they’d get taller and stronger in flavor, but they’d never develop a bulb, but we all knew that, right?

It’s a Spring onion if the bulb is rounded and pudgy.  If  it’s  left to grow, it develops into a regular onion, making the growing season for them rather short.

Obviously, both are members of the onion family.

Some where (I wish I could remember where) I saw someone grill them. They cut them in half, spritzed them with olive oil, a sprinkle of  sea salt and  pepper, and grilled them up.  If I knew where it was, I’d show you their pretty ones. (if it was you, let me know-OK?) You could use a grill pan for them but, now with spring upon us, you might as well use your outdoor grill.

They were delicious!

The tops got kind of crunchy and the bulbs were tender.  But they did not take a pretty picture.

Spring Flowers

But my snowball plant is pretty photogenic. It needs a good pruning but it’s loaded with flowers right now.

 Isn’t it bee-u-te- full?

Spring Flowers

And I was lucky enough to catch this little guy on my lilac bush.

Spring is in the air!

Cinnamon Banana Bread

I did make the Cinnamon Banana Snack cake recipe into a loaf.

Made with whole wheat and bananas instead of oil, it’s a snack I can feel good about eating.

Speaking of snacks, I have also been making the Chewy Granola Bars and the Chocolate Chip Oatmeal Snack Bars   *EVERY*  week. I’m telling you, they are ideal if your a lunch packer or a snack taker. When I make up a batch, I measure out the dry ingredients for the next weeks batch and store it in a plastic container. Then I’m a head of the game for the next week. My own snack bar mixes! Packed with oats,  they are both snacks I also feel good about giving to my family.

Raise your hand if you have tried either bars.

Anyone?

April! She made both aPeanut Butter Chocolate Covered Paisen Granola Bar and a lightned up version of the Chocolate Chip Oatmeal Bar.

And dear Deeba, I got the Granola Bar Recipe from her originally and She made a Double Chocolate Strawverry version of the oatmeal bars!

Do I see Ingrids hand back there? Hold it high Ingrid. She made the Oatmeal Bars with toffee pieces! Can I tell you I tried it her way, and we  ♥ loved ♥   them!!!

But… to be honest, I think I burned the kiddo out on granola bars (not the oatmeal bars) for a while. But The Hubby is still going strong on them!

Spring Flowers

Let’s think, what else I have I made?

Oh yea, I made a gratin, and an oriental salad that we didn’t care for. And there was a new burger recipe that The Hubby said was to mushy. Um-mm, not to much luck in the kitchen lately. It’s this Spring fever I tell ya. But I hope your enjoying these pictures from my back yard!

Garlic Chives

My Garlic chives are looking rather healthy. Got any recipes utilizing this herb I can steal borrow?

Spring Flowers

I got a few plants for my little bitty salsa  garden that I shall grow and it shall thrive! (positive thinking!)

That’s my dog  Mario above. He’s much cuter when he isn’t all blurry and  his ear isn’t flopped backwards.

Spring Flowers

Now for a little bloggy news.

I’ve also had some bloggy woes. You see, I was trying to update my favorite links and I messed up some stupid code and things went all wacky.  :(    Thankfully, a call to my Computer Guru and he made everything fine again.   :)   So please, check out some of my favorite links in that boxed widget on my left sidebar.

← See it? In that blue box. Scroll up! Click on that middle tab and check it out!  Make sure it’s working for me! That was a group effort there, I tell you. Now I’m afraid to touch it again for I now live in fear of code.  ;)

Oh, and I almost forgot. I have a question for you all. I was also asked about a google friend connect box so I added it. Do you all use that method for keeping track of your blog reading? Let me know how you feel about it. And I only have 4 lonely friends on there, so would you be so kind and  connect with me? I kind of feel like a loser with only four friends.

Will you be my friend?

Edited: The Google box has disappeared and I don’t know why. Maybe it’s a sign. (shrug)

Garden Flowers

 Do stay tuned.

I have some Flower Pot Cakes coming up for Mother’s Day that you wont want to miss.

And there  just might be some bread dough in the refrigerator.

You’ll have to come back to see what kind!!  :)

I can’t believe I didn’t know that about spring onions. I knew you guys called them scallions but I didn’t know that there was a different name for the two different shapes. The scallion type are easier to slice up but I think the round ones taste better.

Enjoy the sunshine!

You crack me up! It sure sounds like a lot of excuses…I would of bought the 70 degrees and partly sunny and you were spending your time outdoors:D

The onions look like what they sell here as Florida onions! They are good!

Nice photo of the butterfly, it looks so good on the lilacs it almost looks fake! I miss lilacs, it’s nice seeing yours, I wish I could smell them!
