I recently made a Snickerdoodle Bread that was out of this world. Everyone LOVED it, wanted more, and it went as fast as time itself.
So when my good friend Barbara from Barbara Bakes told me she was invited to be part of the I Cant Believe It’s Not Butter Holiday Bake-Off in NYC, I was so  jealous happy for her. She was going to makeover her Snickerdoodle Bread Recipe into a “ better for you food that is delicious” snack cake recipe.

Snickerdoodle Quick Bread

Being that I had just made her bread, she asked me a few questions about it’s performance at sea level and I was quick to offer her some trial runs. I mean, really, isn’t that what friends are for?

Send me a revamped recipe and I’ll bake it up!

It was the perfect excuse to make some more Snickerdoodle wonderfulness.

So we discussed how many eggs, what kind of leavening,  loaves or cakes. All of those very technical kinds of things that foodie bakers talk about. ;)

And she came up with her Snickerdoodle Snack Cake with Cinnamon Caramel Sauce!

Fabulous idea that Snickerdoodle cake is! I’m heading over there to get the recipe and hopefully try it tonight! I like using I can’t believe it’s not butter, very tasty and a lot less fat. BTW- found your blog via Gera’s (sweetsfoods) Friday Roundup.
