This recipe comes from when I was a single, full time working gal. After working a full day on my feet, I wanted something quick and easy for dinner that, would also please a man. Something hardy!

A local grocery store that I use to shop, sold a pre-made fajita meat and I would pick it up for fast meals. We would roll it in tortillas, top a salad, or make the boyfriend’s favorite, Chicken Fajita Nachos.

Those days are a distance memory. That grocery store is no longer there, I married the boyfriend, and we live in a different city. But I still make Fajita Nachos!

Foodbuzz and American Express has teamed up and selected 20 bloggers to create an original recipe with six ingredients or less, as part of their Dinner@6 program. I was lucky enough to be selected, and this is my recipe!

Fajita Nacho Recipe

Now a little bit older, and hopefully a little bit wiser, I realize how easy and  cheap it is to make my own fajita mix.

I  saute some chopped onion and pepper together in a little oil for a few minutes while I’m cutting up my chicken. I’ll use either breast or thighs, but I like to cut up the chicken into small pieces. It cooks a lot quicker, and that’s important when your dead tired , and your dogs are barking.

Now add the chicken to your veggies and cook until the chicken is  no longer pink. Season with salt and pepper.  Add a can of drained, rinsed black beans to your fajita mixture and your ready to layer your nachos.

Easy Chicken nachos

I like to put a layer of chips down, then half my chicken fajita mix. A layer of Mexican blend cheese tops the first layer and then you repeat ending with cheese on top. Stick it under the broiler for a few minutes to melt the cheese and dinner is ready!

Serve with some salsa, sour cream, or guacamole.

Six ingredients is all it took.

  1. Onion
  2. Peppers, I used a green one and a red one.
  3. Chicken
  4. Black beans
  5. Mexican Blend Shredded Cheese
  6. Tortilla Chips

Cook time: 15 mins
Total time: 25 mins
Serves: 4
Fajitas meets nachos and you get Easy Chicken Fajita nachos using just six-ingredients.
Ingredients
  • 1 onion, chopped
  • 2 peppers, chopped (I used one red, one green)
  • 6 chicken thighs, cut into small bite size chunks
  • 1 can black beans, drained and rinsed
  • 2 cups (or more) Mexican Blend Grated Cheese
  • Tortilla Chips
Instructions
  1. Saute onion and peppers 10 minutes or until soft.
  2. Add chicken and cook till chicken is done.
  3. Add black beans.
  4. Layer chips in a pan that can go under the broiler.
  5. Add a layer of Fajita chicken mix.
  6. Sprinkle with 1/2 the cheese. repeat layers using all the ingredients and finish with cheese.
  7. Place under the broiler until cheese is melted and chips are toasted, about 2-3 minutes.
  8. Enjoy!

My favorite six-ingredient recipe is a Summertime Tomato Basil Salad!
1. Cherry tomatoes
2. Olive oil
3. Balsamic vinaigrette
4. Fresh basil leaves
5. some grated parmesan cheese or crumbled goat cheese
6. a bit of finely-chopped onions

Carrot cake is my absolute favorite dessert and this microwave recipe is so easy:

Mix together:
1/2 cup oil
1 cup brown sugar
2 eggs
cinnamon
1 1/2 cups whole wheat flour
1 packet baking soda
1 cup of raw carrots

Put the mixture into a microwave-safe pyrex, preferably round, and in about 7 minutes it’s ready!

That looks so delicious! One of my favorite recipes, my mom taught me how to make this, it’s so yummy with a side of mashed potatoes.

Chicken Monterrey

1 tsp extra virgin olive oil (or butter)
4 chicken breasts
2 cups of shredded Monterrey jack cheese
1/2 c onions (sliced)
1 c mushrooms (canned or fresh)
1 clove of garlic (minced)
1 pinch of Morton’s seasoning salt

Heat oil in pan, add garlic and onions and cook til translucent, add chicken breasts and grill over medium heat until nearly browned on both sizes, sprinkle with seasoning salt and add mushrooms to pan. Turn heat to low, sprinkle each chicken breast with some shredded cheese, and then cover with skillet lid. Allow cheese to melt then serve immediately.

That is a great recipe, I love the twist with the beans and nacho chips!

One of my close seconds for easy recipes this season is hot sausage sandwiches and it is exactly six ingredients. These are a must for football games in Pittsburgh. I am a longtime Chicago resident but I still have my Pittsburgh football game roots. This recipe is appended to be heart healthy but is every bit as good as the original!

1 pkg jennie-o lean hot turkey sausage (5 per pkg) or other lean sausage
1 pkg turano (or other) french rolls
1 16 oz can or bottle pizza sauce, I like contadina but have also made my own using tomato sauce and italian spices (oregano, basil, salt, pepper, etc.)
1 small can tomato paste for proper consistency
1 large onion
1 large green or red pepper
Brown the sausage, drain, set aside, then cook the onions and peppers. Add sausage back to pan along with the pizza sauce and tomato paste. Cut sausage in half to absorb the sauce and seasonings. Serve on roll with plenty of onions, sauce and pepper, using foil to keep sauces in sandwich :-) . Double or triple recipe for larger groups :-)

Yum! My favorite 6 ingredient meal would have to be a Philly Cheese Steak Sandwich made easy!
-Grilled Steak Strips
-Melted Cheese on top
-Bread Roll
-Slowly Caramelized Onions
-Sauteed Peppers!

So good and quick!

Super Simple Tuna Noodle Casserole

I make this with whatever is in the pantry on nights I am looking for something quick and easy. Combine all the ingredients in a casserole dish except the breadcrumbs (sprinkle those on top) and cook at 350 degrees for 25-35 min. Then enjoy!

2 cans Tuna
1 1/2 cup cheese
onion or whatever veg you have lying around
1 can cream of chicken soup
1 pkg egg noodles
1 cup bread crumb

Honey-Soy Pork Chops
1/4 cup lemon juice
1/4 cup honey
2 tablespoons reduced-sodium soy sauce
1 tablespoon sherry or unsweetened apple juice
2 garlic cloves, minced
4 boneless pork loin chops
combine the first five ingredients. Pour 1/2 cup into a large resealable plastic bag; add pork chops.
Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.
over heat for 4-5 minutes on each side or until a meat thermometer reads 160°, basting frequently with remaining marinade.

my fave 6 ingredient recipe is something we call ‘the dish’ its basically baked penne with cheese and a meat marinara sauce. its simple, warm, hearty and comforting. serve with a salad and you’re good to go!!

My own recipe… Speedy Casserole Ole. Ground turkey cooked and drained. Add taco seasoning and one can enchilada sauce. Layer crushed tortilla chips, the meat mixture, blk beans and shredded cheese. Bake at 350 for about 20 minutes.

This looks so yummy! I know my always-up-for-nachos boyfriend will love it!
My favorite 6 ingredient or less recipe is for homeade pizza-
1. Flour
2. Yeast
3. Lukewarm Water
4. Salt & Time (though they’re not supposed to count)
5. Sauce
6. Cheese

You can also add as many toppings as you’d like to the pizza. This is only the base recipe.

Heres my fav:
pork chops stuffed with bacon and gouda

2 ounces smoked Gouda cheese, shredded
4 slices bacon, cooked and crumbled
1/4 cup chopped fresh parsley
1/8 teaspoon ground black pepper
2 (2 1/4 inch thick) center-cut, bone-in pork chops
1 teaspoon olive oil

Directions

Preheat an outdoor grill for medium heat.
In a small bowl, combine the cheese, bacon, parsley, and 1/8 teaspoon black pepper.
Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff cheese mixture into pocket, and close with a wooden toothpick. Brush meat with oil, and season with salt and more black pepper.
Lightly oil the grill grate. Grill over medium heat for 5 to 8 mi

My favorite 6 ingredient or less recipe are Green Chicken Enchiladas! Easy and delicious!

I can salsa verde
2 cans cream of chicken condensed soup
Corn tortillas
Cooked chopped chicken
Pepper jack cheese

Mix salsa verde and soup, set aside. Lightly fry corn tortillas in oil (my preference) or heat on hot skillet until soft. Next add a little chicken in middle of tortillas and roll up burrito style.

Spread about 1/2 c sauce in bottom of baking pan. Add rolled-up tortillas side by side. Cover with remaining sauce and sprinkle with cheese. Heat in 400 oven for 15-20 min.

My favorite 6-ingredient recipe is Baked Eggs with Tomato and Spinach: 8 eggs (separated), half an onion, bunch of spinach, can of diced tomatoes, Parmesan Cheese, Mozzarella Cheese.

Mix eggs whites with cheeses. Saute onions, add spinach and tomatoes. Add to egg mixture and pour into small baking pan. Top with egg yolks and bake at 400 degrees for 25 minutes until puffed and golden. Delicious with crusty french bread!

Mine is White Bean Dip! I love it as a healthy snack that doesn’t taste like it is :) White beans, Extra Virgin Olive Oil, fresh garlic, fresh-squeezed lemon juice, oregano, and kosher or sea salt. Yum!

WOW, what a great giveaway! I would have to say that a quick breakfast chilaquiles is my fav. Saute 10 corn tortillas, cut in triangles, in olive oil and fry until cooked. Add green salsa, black beans and cook for 10 minutes, Top with chopped red onions and cheese. Devour!

Potato Soup with Bacon

(very thick and creamy, and I leave lots of potato chunks in it)

5 slices bacon
5 russet potatoes
2 cans chicken broth
about a cup of half and half
garlic and onion to taste

I bake my potatoes first, sometimes the day before. Peel when cool.

Chop bacon into small pieces and brown in pot. Remove from drippings and set aside. Simmer garlic (I use 3-4 pods, minced) and one chopped onion in bacon drippings until transparent, about 5 minutes. Next, add two cans of chicken broth and the potatoes that have been chopped into small pieces. I also add a bit of water to get he right proportion of liquid to potato. I let this cook for 45 minutes or so until the potatoes have started softening and dissolving. At this time I use a masher to mash until I get the consistency I want.

I stir in half and half about five minutes before I serve, and I also add the crumbled bacon at this time.

My favorite six ingredient recipe is a stuffed green pepper: green pepper, ground beef, tomato sauce, rice, mozzarella cheese and onion. Cook ground beef with onion drain grease, cook rice as directed, clean pepper outside and scoop out inside, add tomato sauce and cooked rice to beef and then stuff in pepper and top with cheese and bake

My family likes chicken tacos made with this 6 ingredient recipe.

2 lb. boneless chicken breasts
1 jar salsa
2 T. chili powder
1 t. cayenne
1 t. cumin
2 limes (squeeze the juice over the top, throw in the lime halves – remove before eating)
1/2 bunch cilantro

Cook in crockpot on low for 8 hours.

I want these nachos!!! They look amazing! Here’s my go-to quick & simple 6 ingredient recipe.

Naan Pizza with Basil Pesto

1 naan flatbread
2-3 Tbsp basil pesto
4-5 baby portabella mushrooms, sliced
4-5 sun-dried tomatoes
4-5 black olives sliced
¼ cup goat cheese (less or more depending on what you like)

Preheat oven to 400. Spread the pesto on the naan and arrange your toppings. Bake naan pizza on baking sheet for 7 to 9 minutes.

Enjoy!

I love your chicken fajita nachos. So delicious. Here’s my family’s favorite 6 ingredients dinner.

Creamy Asian Beef Noodle
8 ounces soba (Japanese buckwheat noodles)
1 1/2 pounds of skirt steak, cut in half or thirds to fit in skillet
1 pound(s) of snow peas, stem ends removed
2 tsp. of soy sauce
8 ounce(s) of 8 ounce Philadelphia Cream Cheese, softened
2 Green Onion, chopped

In a pot of boiling salted water, cook noodles until al dente. Drain and set aside.

Heat a large skillet over medium-high. Season steak with salt and pepper. Cook, turning once, until medium-rare, 3 to 5 minutes per side. Transfer steak to a cutting board and loosely cover with aluminum foil (reserve skillet with juices).

Add snow peas to skillet and toss with juices. Cook on medium-high heat, tossing occasionally until crisp-tender, 2 to 3 minutes. Add noodles, soy sauce, and cream cheese, cook until warmed through, about 1 minute. Transfer to serving bowls. Slice steak and place on top of noodles. Sprinkle with green onions and enjoy.

My favorite favorite six ingredient recipe are my maple bacon rollups. Just green beans, maple syrup, bacon, powdered sugar, salt and pepper and olive oil!

What a GREAT weeknight dinner recipe! Simple and delicious! Love how you used a cast iron skillet too :)

My go-to 6 ingredient recipe is!:
- 1 box corn/gluten free shells
- 1 cup cubed extra firm tofu
- 2 huge handfulls of fresh baby spinach
- A couple tablespoons of extra virgin olive oil
- About 1/4-1/2 cup graded Pecorino Romano
- salt and pepper to taste
Cook the pasta according to directions, lightly saute the cubed tofu with olive oil, toss the spinach in with the warm pasta once it has been drained, stir the spinach in with the pasta and add the rest of the olive oil, stir, toss in the tofu with the pasta, stir, toss the cheese in, stir, salt and pepper to taste… Enjoy!

This looks really delicious, great recipe idea!

My fav 6 ingredient recipe is a quick pasta dish…

1 lb rigatoni
1 large onion, chopped
a couple of cloves of garlic, minced
1 lb fresh tomatoes, chopped
handful of basil, roughly chopped
1 lb fresh mozzarella
2 tbsp olive oil
salt & pepper

Cook pasta according to package instructions. While the pasta is cooking, saute the onion and garlic in olive oil over medium heat, then add the chopped tomatoes. Season with salt and pepper, to taste. Cut the mozzarella into bite sized pieces, drain the pasta (when it is al dente) and toss everything together. Top with the chopped basil and you are good to go!
