Raspberry Clafouti

I’ve been on vacation and I’m a few hours late posting this post. My apologies to Alessio!

Alessio has the beautifully done blog,  Recipe Tester.

I’m in awe of his cooking and his blog was my assignment for this months Secret Recipe Club!

I had such a good time reading through Alessio’s blog. He had such gourmet treats like Seared salmon with Linwoods’ seeds, berry and cocoa mix served with a soy-chocolate dip, blanched fava beans, chervil and ginger.

Or how about some Chocolate Calamari Soup?

Oh my!

Alsessio is an Italian guy living in Germany, and oh how  I would love to be able to sit at his dinner table.

And when I saw that he did a guest post over at Chow and Chatter for a Clafouti, I knew I had found my recipe. Alessio made a  Clafoutis of peaches and apricots with caramelized fennel and blackberry-lavender sauce.

Did I mention I would love to have dinner at his house?

Well, I didnt exactly make a Clofouti of peaches and apricots, but I did make one with Raspberries! And I didn’t caramelize any fennel or make a blackberry lavender sauce. I served mine with a Vanilla Lime syrup drizzle!

Easy Clafoutis recipe

So this is how it all came down. I have wanted to make another Clafouti using raspberries every since I made my first Clafouti. So I followed Alessio’s recipe for the custard part of the recipe. Except I didn’t have access to Quark cheese and I really didn’t have the time to make any. So I tweeted my friend Deeba for a substitution. She uses a a lot of Quark cheese and even she has an easy recipe to make it. She told me I could sub in cream cheese and maybe a little quirt of lime for the tang of Quark cheese. So used the cream cheese and I saved  that squirt of lime for my sauce.

Raspberry Clafoutis Recipe

So here is my version of Alessio’s Clofouti.

Raspberry Clafouti with A Vanilla Lime Drizzle

{Secret Recipe Club} Raspberry Clafouti
Recipe Type: Dessert
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Serves: 6
Ingredients
  • 1/2 cup flour;
  • 4 tbsp sugar;
  • 2 eggs;
  • 4 oz cream cheese
  • 1/3cup water;
  • 1/4 tsp vanilla extract;
  • 2 baskets of raspberries
  • Sauce
  • 2 TBS Vanilla syrup (I used Torani)
  • Squirt of Lime juice (to taste)
Instructions
  1. Preheat oven to 350
  2. In a bowl, beat the eggs with the sugar and flour till fluffy with a whisk.
  3. Blend in cream cheese, water and vanilla
  4. Place berries in 6 ramekins
  5. Pour the batter over the top filling the ramekin.
  6. Sprinkle the top with some sugar and bake for 30 minutes or until golden brown. When ready let it cool down slightly.
  7. For the sauce,
  8. Add lime juice to vanilla syrup. mix well.
  9. Drizzle a teaspoon of syrup over individual servings.

That looks very impressive. Until I realized that raspberries aren’t gigantic, I thought one of those served five or six people! :-/

I’ve always wanted to try clafouti and never have. Raspberry would be de-lish! Glad you make it on a vacation and had a great time!

I’ve definitely got to try making clafoutis now that so much wonderful fruit will be coming on sale. This looks excellent.

Not only looks great Megan but what is it with me? I just love the name Clafouti; made my first one last year and this would be a great addition to that very small number of Clafouti recipes I have.

Beautiful recipe! And thanks for the tip on using cream cheese as a sub for Quark…I’ve seen a few recipes around with Quark and I was wondering about that!
