Or Mother’s Day…
or Easter!
He will pretty much take me out to dinner any other time that I want, and I really don’t mind cooking for these such occasions. It’s special nights like this that we’ll have things like Rib Eye Steaks topped with Blue Cheese or this Fillet Mignon with Cognac Sauce.

Finish this special dinner off with a slice of this Raspberry Truffle Cake, and you have an impressive meal at the fraction of the cost of those fancy steak houses. And these little dishes are so easy to make, you’ll have your valentine begging for more!.

Your seasoned steak is pan seared and cooked to perfection in just minutes. Then you remove your steaks and sizzle a few green onions, add a little beef broth and cognac, reducing a bit. Finished of with a rich pat of butter before swirling your steaks in the juices and serving. Pure ecstasy!

This almost flourless cake is dense, rich, and a chocolate delight that has ♥ Happy Valentine’s Day♥ written all over it.
Serve this slice of heaven after your meal and your nearing Nirvana!

Filet Mignon with Cognac Sauce
Ingredients
2 – 4 oz beef tenderloin steaks
1/2 Tablespoon Montreal Steak Seasoning
1/4 Cup green oninons (chopped)
1/2 Cup Beef Broth
2 Fl. Oz. Cognac
2 Tablespoon butter
1. Heat oven to 350. Use Montreal Steak Seasoning as a dry rub. In a steel skillet, add oil and heat to medium-high heat. Add steaks and sear the top and bottom until one
2. Remove from skillet and place on a plate and cover with aluminum foil.
4. Return skillet to burner over medium heat. Add green onions an let them sizzle for a moment. Pour in the beef broth and the cognac. Using a wire wisk, remove all bits from bottom of pan . Once at boil, lower heat to reduce sauce by 1/2.
5. Add butter. Swirl steaks in the juices before serving.
6. Transfer steak to plate and spoon sauce over meat.
Raspberry Truffle Cake
Ingredients
- 16 oz. Semi sweet chocolate, cut up
1/2 cup butter
1 Tablespoon sugar
1 1/2 teaspoon flour
1 teaspoon raspberry liqueur (optional)
4 eggs, separated
1 12oz jar seedless raspberry jam (1 cup)
In a large sauce pan, combine chocolate an butter. Heat till chocolate melts. Remove from heat and add sugar, flour and liqueur. using a spoon, beat in egg yolks one at a time, till combined. Set aside.
In a mixing bowl, beat egg whites till stiff.Fold into chocolate ,mixture. Pour into a greased 8 inch spring-form pan. Bake in a 350 degree oven for 25-30 minutes till puffed. Cool on a rack for 30 minutes. Removes side of pans and let cool completely. Chill, covered for 4-24 hours.
Heat jam in a small saucepan till melted. To serve, drizzle jam on each plate, top with cake slice. Garnish with whipped cream, and fresh raspberries.

Ooh… I’ve definitely made filet mignon for past Valentine’s Day dinners. Looks delicious! And that raspberry truffle cake… man, if I didn’t already have a dessert planned, I’d definitely be having that! I agree… going to restaurants is too much of a hassle on V-day… and it’s much more cozy and romantic to be home.
I would much rather sit home and eat this than sit at some crowded restaurant. I hate fighting off crowds of people in love…haha.
