One of my greatest Summer pleasures is a  fresh, juicy peach.

This Summer I went through flats and flats of  delicious peaches. I have made  jars of Jalapeno Peach , and Lemony Peach Jam,  a beautiful Peach Pie, and my favorite Peach  salsa.  I even had a dinner party were the whole menu revolved around the AL-mighty peach. Yes I love me a fresh Summer peach!

You know what else I love?

A cool frozen treat on a hot Summer day! When the temperature rises, I start looking for ways to cool down.  Floating in a  pool preferable, with a book in one hand and an ice cold Popsicle in the other hand.! Now that’s my idea of Summer!

Before the the last of the peaches  disappear, you should try these cool fruit pops.  Bursting with fresh peach flavor, and smooth creamy texture, (no hard frozen fruit chunks)  these frozen treats disappeared fast!

They were fun, fruity, and fabulous!!!

Peaches and Cream Popsicle

3 medium fresh peaches cut into a few pieces
1/2 cup Greek yogurt
1/3 cup sugar
1/3 cup milk
1/4 teaspoon almond extract
1/8 teaspoon fine salt

Directions:

  1. Place all ingredients into a blender or food processor and blend till smooth.
  2. Divide the mixture evenly into the Popsicle molds.
  3. Insert the sticks and freeze until solid, at least 5 to 6 hours.

LOVE these popsicles! peaches and cream(or yogurt) are such a great combo!

I have a pile of nectarines I plan to adapt for these refreshing pops while we still have summer days left.
