You said it had a bite so I am guessing something that made it spicy or zesty like chili pepper.
I have also seen recipes where you blend up a whole orange and put it in muffins, maybe you did that. A whole orange would certainly make a cake zesty and give it some bite.
Or maybe you were invaded by fire ants…those would give your cake some bite

If San Fransisco is a hint, I could guess a sourdough starter is in the cake. Otherwise, I guess buttermilk. Either way, it looks yummy!
