Here in the North State, in the land of 115+ degree weather, Summer has finally arrived.
We have had 60 degree weather lately,and lots of rain.Graduation ceremonies were moved indoors, the end of the year parties were canceled, and the kids returned home from the county fair covered in mud. It sure didn’t feel like Summer.
But the kids got out of school last Friday, my last day of work was yesterday (Monday), and today?
Today the sun is shining!
And just in time. My vacation at the lake starts this Friday, and I have a great way to cool off.
Honeydew and Cream Popsicle with Pistachios!
These were ridiculously easy and I found them to be a fun grown up ice pop. If fact, all the possibilities were flowing through my head as I enjoyed this Popsicle. How about a watermelon flavor? Of a raspberry and cream? Or… forget about the stick and make it into a sorbet with your ice cream maker. I was thinking about making a watermelon version for a wine pairing dinner using vodka instead of the cream. Ohhh… the possibilities!

I think I might be making a lot of fruit pops this Summer!
| Honeydew and Cream Popsicle with Chopped Pistachios |
- 1/2 honeydew melon (1 1/2 pounds), cut into 1-inch chunks
- 1/4 cup heavy cream
- 2 TBS honey
- 2 TBS (1/2 ounce) roasted, salted pistachios, coarsely chopped
- Puree honeydew, cream, and honey in a food processor.
- Blender until smooth.
- Sprinkle about 1 teaspoon pistachios into each of 8 ice-pop molds.
- Pour honeydew-cream mixture into molds.
- Freezer until completely frozen, about 6 hours more or up to overnight.
- Enjoy!

I love the photo! Did they taste as good as they look? Our student’s last day was Monday and we have today and tomorrow, then out for summer! Here on the west coast of Florida, we are hot and humid in the summer, but we never reach 100 degrees! One good thing
Of course we would still love to eat these pops all year long! I’m checking out the smoothies and other goodies!

We love making popsicles in our house. I’m almost tempted to get that crazy one from William-Sonoma that makes them in 10 minutes just to satisfy my family’s love of popsicles.
I think my summer is going to call for a lot of popsicles too
