Summer is here!

Here in the North State, in the land of 115+ degree weather, Summer has finally arrived.

We have had 60 degree weather lately,and lots of rain.Graduation ceremonies were moved indoors, the end of the year parties were canceled, and the kids returned home from the county fair covered in mud. It sure didn’t feel like Summer.

But the kids got out of school last Friday, my last day of work was yesterday (Monday), and today?

Today the sun is shining!

And just in time. My vacation at the lake starts this Friday, and I have a great way to cool off.

Easy Fruit pops

These were ridiculously easy and I found them to be a fun grown up ice pop.  If fact, all the possibilities were flowing through my head as I enjoyed this Popsicle. How about a watermelon flavor? Of a raspberry and cream? Or… forget about the stick and make it into a sorbet with your ice cream maker. I was thinking about making a watermelon version for a wine pairing dinner using vodka instead of the cream. Ohhh… the possibilities!

Honeydew and Cream Popsicle with Chopped Pistachios

Total time: 6 hours 10 mins
Serves: 8
Fresh fruit and a little cream turn these ice pops into a snack even an adult will appreciate!
Ingredients
  • 1/2 honeydew melon (1 1/2 pounds), cut into 1-inch chunks
  • 1/4 cup heavy cream
  • 2 TBS honey
  • 2 TBS (1/2 ounce) roasted, salted pistachios, coarsely chopped
Instructions
  1. Puree honeydew, cream, and honey in a food processor.
  2. Blender until smooth.
  3. Sprinkle about 1 teaspoon pistachios into each of 8 ice-pop molds.
  4. Pour honeydew-cream mixture into molds.
  5. Freezer until completely frozen, about 6 hours more or up to overnight.
  6. Enjoy!

The photo looks great, but I just wasn’t sold on the flavour combination.

And I just bought a honeydew yesterday, and now it’s 82 degrees. Couldn’t have planned it better if I’d tried.

I love the photo! Did they taste as good as they look? Our student’s last day was Monday and we have today and tomorrow, then out for summer! Here on the west coast of Florida, we are hot and humid in the summer, but we never reach 100 degrees! One good thing :D Of course we would still love to eat these pops all year long! I’m checking out the smoothies and other goodies!

I’m so glad you liked them, Megan. Your pictures look great :) We love making popsicles in our house. I’m almost tempted to get that crazy one from William-Sonoma that makes them in 10 minutes just to satisfy my family’s love of popsicles.

I wasn’t a fan of these but my husband liked them. I think I might like them with watermelon better.
