Honey Roasted Peanut Butter Bars with Chocolate Ganache Recipe

And the 3rd cookie in this series is a real winner! A honey roasted peanut butter filling on top of a chocolate crust and covered in a sinfully rich chocolate ganache.

Honey Roasted Peanut Butter Bars with Chocolate Ganache

From Better Homes and Gardens Magazine Christmas Cookies

(Printable Recipe)

  • 1 Devil’s Food Cake Mix
  • 1/3 cup butter, melted
  • 1 egg
  • 3/4 cup butter, softened
  • 3/4 cup honey roasted peanut butter
  • 2 TSP vanilla
  • 3 cups powdered sugar
  • 2 TBSP whipping cream or milk
  • 3/4 cups honey roasted peanuts, chopped
  • 1/3 cup whipping cream
  • 1 12 oz pkg Semi-sweet chocolate chips
  1. Heat oven to 350°F. Grease bottom only of 15x10x1 inch pan with cooking spray or shortening. (For easier cutting, line pan with foil, then grease foil on bottom only of pan.) Set aside.
  2. In an extra large bowl, combine dry cake mix, 1/3 cup butter, and egg.  Beat with an electric beater on low speed for 1 –2 minutes or until mixture is combined. Press mixture into bottom of prepared pan. Bake in preheated oven for 12 minutes.  Cool completely.
  3. In a large bowl, (I used same bowl, didn’t even wash it!) combine 3/4 cup butter, peanut butter, and vanilla. Beat with electric mixer on medium speed for 30 seconds. Beat in 2 TBSP whip cream. Stir in the chopped peanuts. Spread mixture evenly over the cooled crust. Place uncut bars in the refrigerator while you prepare the ganache.
  4. In small saucepan, bring 1/2 cup whipping cream just to boiling over medium high heat. Remove from heat and add chocolate chips. Do not stir. Let stand for 5 minutes. Stir until smooth.  Cool 15 minutes; spread over filling. Refrigerate 1-2 hours or until set. Cut into bars. Makes 48 bars.

Store covered in refrigerator. Let bars stand at room temperature for 15 minutes before serving.

This is just so cruel… especially on a Friday afternoon when I could really use a pick-me-up. :) Those look amazing!! I've made peanut butter bars with chocolate on top before but not honey roasted peanut butter and not with a chocolate crust. These must be heavenly!

I was just remarking the other day about how close it is…and did already bake a test batch of some great White Chocolate Chunk cookies… but, think for an even more festive look…. cherries..in and on top….mmmm….. yep…time to begin the taste testing right about now….

What a GREAT recipe. How do you keep your holiday cookies fresh for so long? Do you have some special way of wrapping and freezing? I'd love to start making cookies this early, but when I do, they aren't "at their peak" after that long in the freezer. Whats your magic?

Two things… I've never made cookies/bars w/ a cake mix base, and I've never purchased Honey Roasted Peanut Butter! Will have to try it out!

Megan, I made these the other day, and they are wonderful! I did notice that in your instructions you forgot to add the powdered sugar into the peanut butter mixture. I hope you don't mind if I share these on my blog. I had to give half of them away so we wouldn't overindulge!
