I just baked up a nice loaf of bread from The Healthy Bread in 5 Minutes a Day Cookbook.

Baking with my new pals of the HBin5 group, out bi-monthly recipes were Avocado Bread and a Pesto Pine Nut Bread.

Somehow deep in my tiny brain, I was picturing both of these breads as turning out green. Could it have been the influence of the upcoming St. Patrick’s Day celebration that was clouding my mind?  Silly me, they are no where near green. And now that I think about that, it’s a good thing.

Peato Pine Nut Bread

My very favorite was the Pesto and Pine Nut Bread pictured above. I cut this bread warm out of the oven so don’t mind the look of the crumb of this loaf. I should have let it cooled for a perfect picture. But I didn’t. I couldn’t! I loved the  nut studded loaf with the flavors of basil and Parmesan drifting throughout this soft bread. While I thought this was a great dough to bake into a loaf, I think it would make a wonderful foccassia bread or pizza crust.  I can see this bread being made again, and again!

Avacodo Bread

The second loaf of bread was an Avocado and tomato bread. (Pictured above) The avocado and a tomato are diced up and incorporated into the dough with the wet ingredients. A nice dough, a beautiful loaf, but we were not fans of the taste. My daughter had a sandwich made out of this bread and she informed me after school that her sandwich was weird tasting.

 ”New bread”, I told her.

I don’t think I’ll be making that one again.

But all in all, I have to say, it’s been wonderful baking my way through this book. I’m incorporating a healthier bread into my family’s diet while trying easy breads I would have never baked on my own!

I’ve seen the avocado bread posted, but not the pesto bread. I’d love to try that!

I thought the breads would be slightly green too and I was disappointed that they just looked like bread. Darn!

Some members commented that there was an odd flavor to the Gaucamole Bread but I did not notice anything odd, just tasted like WW bread to me. But my tastebuds might be getting old…LOL!

Baking bread is so much fun, I’m glad you could join in!

Your loaves are beautiful. We loved both these breads. I made focaccia from the avocado recipe and it was wonderful. And I really loved the pesto bread. It also makes great pizza. I look forward to reading more of your posts.

Both of your breads look great, but I think I would like the pesto pine nut better too. I could definitely see using it as a pizza crust, focaccia, stromboli, calzone, toasting it with some more cheese on top. I’m on a roll! You’ve inspired me with this bread, can you tell:D

Great job! I too thought they would be a different color but this bread is always surprising me.

They sure do look pretty. I was wondering about the green too. The pesto, pine nut sounds delish!

I couldn’t make the basic bread, it just wouldn’t turn out for me, so I didn’t join the group (I’m just not a good baker).

I’m experiencing bread envy here. Your loaves are gorgeous! I’m sorry your family didn’t enjoy the avocado/guacamole much.. but, isn’t it fun to experiment with all these different flavors?

Two loaves! Thanks for being honest about the avocado and tomato bread. Both loaves look beautiful. I’ve found that breads made with fresh fruits and vegetables need careful storing and are best eaten the day they are made.

These breads look sooo good. I would see avocado being kinda weird in bread – but I’d think tomato would be good. Who knows!

Pesto pine nut sounds deee-lish. I am surprised at the tomato not working out so well…I find that a disappointment as that would have been my first choice. Thanks for sharing your thoughts on these!

That’s funny! I thought the breads would be green as well.

Both of your breads look really good. I liked the pesto pine nut dough better myself.

I too loved the pesto bread. I wish the avocado bread had more of the flavors to it…they sort of got lost in dough I guess. Your breads look beautiful!
