Flavor Infused Iced Tea

When you extract flavor from one thing, and give that flavor to something else,  you get Flavor Infusion!

I love my ice tea and I think it’s a perfect Summer time drink. I  usually drink sun tea straight up, over the rocks, no sugar, no lemon.

But sometimes I want it,…   I want it a little bit different. A little sweeter with a lot of flavor!

We use to drink a lot of Crystal Light  around here, but it’s so dang expensive. So I started infusing my own ice tea with flavor.

Flavor infusion

You could do this with a number of different flavor factors. Raspberry, strawberry, or peach. How about using a pomegranate or a lime? I bet watermelon would be good!

So try spiking your ice tea with some flavor. I double dare ya!

And if you have any flavored syrup left over, use it as a light dressing for a fruit salad.

The mint is delicious!

And now for an awe moment;

We are babysitting a 8 week old baby.

Such fun! Here he is trying to get on the deck.

Look at those ears!

Iced Tea Infusions

2 lemons, zest, juice, and rind
10 sprigs fresh mint
2 cups water
1 1/2 cups sugar
1 gallon unsweetened ice tea

Combine  the lemon rind and juice into a small bowl. Put the mint into a second bowl and bruise lightly with a pestal or the back of a wooden spoon.
Bring the water and the sugar to a boil.Remove from heat and place equal amounts into each bowl. Let the mixture come to room tempeture, then strain into clean jars or bottles. Cap or cover tightly and refrigerate for up to 1 week.

To prepare iced tea infusion:

Fill a large glass with ice. Add 3/4 cups ice tea and a couple tablespoons of the flavored syrup. Sip & Enjoy!

Note:Prepare ice tea using fresh filtered water. Seep the tea longer then you normaly would because the syrup infusions will dilute the tea.
