I’ve been inspired by all the cakes in a jar that I have seen lately. It’s such a clever idea and a great way to transport cake with out any worry. Plus who wouldn’t want their own individual piece of cake, eaten out of a jar?
My first intention was to make this luscious looking Lemonade Cake. But I couldn’t remember where I had seen it and of course, I didn’t find it again till after I made this cake. So I decided on a recipe that I had first tasted at work. My co-worker would make this cake for birthdays, and everyone loved it. It’s the cake that is most requested at her house. And as luck would have it, I found the same recipe, Everyone’s Favorite E-Z Lemon Cake, in a cookbook I have called, Cake Mix Magic In Minutes.
Yes, it starts with a cake mix, and then it gets doctored up.
But, I have no problem using a cake mix sometimes.
I’m a busy gal!
This is a rich lemon cake with a glaze that is poured over a warm cake that has had holes poked all over. The glaze seeps down into the cake and produces a very moist, tangy, and sweet cake that has no need for a frosting. But I did put a few sprinkled on top.
Because life is better with sprinkles!
Now you don’t have to make this cake recipe in a jar. It will easly make a 9×13 inch cake, or you could use a a Bundt pan.
But these were baked right in the jar!
How fun and easy is that?
After they cool, screw on a lid and they are ready for the picnic basket.
It’s fun to see people’s expressions, when you hand them a jar of cake.
I made 8 jars of cake, with enough batter leftover to make a mini loaf. I bet you would get about 12 jars out of this recipe.
And it was amazing!
But no matter how you slice it, or in this case, bake it, it was everyone’s favorite lemon cake!

| Everyone’s Favorite E-Z Lemon Cake {In A Jar} |
- 1 package (18oz) lemon cake mix (preferably with out pudding mix added)
- 1 (3.4oz) instant lemon pudding and pie filling mix
- 4 eggs
- 1 cup water
- 1/3 cup vegetable oil
- 1 lemon -grated peel
- 1 lemon -juice (about 3 TBS)
- Glaze-
- 1 cup powdered sugar
- 1/2 lemon-juice (about 1 1/2 TBS
- 1/2 TBS water
- In a large bowl, combine cake mix, pudding mix, eggs. water. oil, and lemon juice. With an electric mixer, mix on low speed to combine.
- Beat at medium speed for 2 minutes
- Stir in lemon peel
- Pour the batter into a well-greased 10-inch Bundt pan, 9×13 in pan or about 10 half pint jars.
- Bake at 350º F. for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes.
- Combine all the glaze ingredients (powdered sugar, lemon juice, and water) and beat until smooth.
- If you made a Bundt, invert the cake onto a serving plate.
- Poke wholes in the cake with a toothpick or wooden skewer.
- Drizzle with half the glaze.
- Cool the cake completely; then drizzle with the remaining glaze.

I’m sure intrigued by the cakes in a jar…and this seems perfect with the poked holes and the sauce being allowed to integrate the entire cake. Looks cute too!

When you put the sauce over the cake in the jar, it has no where to go but in the cake. Ingenious! Also good for portion control–if you don’t use a large jar. Love it!
I have no problem using cake mix either — especially when the end result is as pretty as this! The sprinkles really are super cute on top too!

I like the idea of cake in a jar!
I heard of putting the dry ingrients in a jar for gift giving with instruction on how to proceed with the recipe but I’d never seen this idea below.
I only wonder how you know what length of time is required to bake in the jar.
