Easy Blackberry Pie {In A Jar}

It seems the new trend is baking in a jar. I got on the band wagon  when I baked my EZ Lemon Cake. It is such fun to see peoples reaction when you pull out a piece of cake, or any dessert for that matter, that has been put into a jar.  And did I  mention the ease of transporting it.  I took my lemon cakes to the races and not a crumb was dropped or damage in the process. So when I recently took a trip to the Oregon Coast, I knew I wanted to make some pie to take, in a jar!

We spent our first few days in the southern coastal area of  Brookings. The weather was perfect with blue sky and temps in the 70′s. If I had to pick a place to move on the Oregon coast, this would be the place!

From there, we went up to Sunset Bay.

We always visit the botanical gardens. You just cant come to Sunset Bay without a visit to the gardens. The rose garden is where you’ll find me, behind the camera!

Here’s my favorite hanging flower plant, the Fuchsia. They grow so big and pretty here.

Easy Cobbler Recipe In A Jar

Before we left for vacation, I whipped up these easy  pies.

I made 4 pies in half pint jars from this recipe I adapted  from AllRecipes. .  I tried to get fancy and cut out a star and baked on top with red, white, and blue sprinkles.. I didn’t have a small enough cookie cutter so I free handed it, and boy does it show. Once I topped it with ice cream, you didn’t even know there was a star. Next time, I’ll just sprinkle the sprinkles on the ice cream, and bake up extra pastry stars to garnish and make it festive.

I did have left over pie crust so I sprinkled sugar and cinnamon on top and baked it up.   It was gone once it came out of the oven!

I find it hard to pack a whole pie in an ice chest or even in that little refrigerator that is in my camping trailer. So when you bake your pie in a jar, you can stack them, put them on the door of the fridge, or with a tightly screwed lid,throw them in an ice chest.

And what a fun presentation you will make when you present your fresh baked pie topped with ice cream, in a jar!

Easy Blackberry Pie {In A Jar}

 

 

 

Recipe Type: dessert
Prep time: 10 mins
Cook time: 50 mins
Total time: 1 hour
Serves: 4-6
An easy to pack little pie that makes a big presentation!
Ingredients
  • 1 recipe pastry for a 9 inch double crust pie
  • 4 cups fresh blackberries
  • 3 tablespoons all-purpose flour
  • 1 cup white sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
Instructions
  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Combine berries, flour, sugar, and lemon juice.
  3. Cut out circles of pastry to fit in and place in the bottom of your jars
  4. Spoonfilling into jars and dot with butter.
  5. Cover with top crust circle.
  6. Bake for 15 minutes.
  7. Reduce heat to 350 degrees F. Continue baking for 35 to 40 minutes, or until browned and bubbly.

I just LOVE this idea of pie in a jar, but I have been thinking about presentation and after add a scoop of ice cream the pie gets lost. I LOVE your idea about baking extra stars out of pie crust and adding them to the top of the ice cream. Brilliant idea! :-)

I have loads of blackberries and even these cute jars. I love these little individual pies, and think they’re the perfect way to use my bounty of berries!
