All through my daughters academic years, she has always taken her lunch to school. She just doesn’t like the school lunches which is kind of funny because, I work in the school cafeteria. But to my credit, I make a pretty mean sack lunch. In fact, she is always telling me that the kids say that I make the best sandwiches. How would the other kids know? Because someone always seems to have either forgotten their lunch, or they just didn’t have one. It seems like she is always sharing. Many times she’ll even ask me to pack 2 treats. One for her, one to share.

Chocolate Chip Oatmeal Snack Bar

These bars are no exception. Everyone loves them and we go can go through a pan in a week.

We’ve made many variations of this bar, which I found over at Maris’s blog In Good Taste. We’ve made them with cinnamon chip, with coconut, and with butterscotch chips. I’ve even added a teaspoon of fresh ground nutmeg before. I like the coconut and chocolate chip ones the best. 

Much to The Kids dismay, I’ve even individually wrapped them. When I got “that” look from her, I told here be grateful I didn’t seal them with a “Homemade with Love” sticker. That would have embarrassed the heck out of her. Teenagers! They are so silly!
Chocolate Chip Oatmeal Snack Bar

Chocolate Chip Oatmeal Snack Bars

  • 1/2 cup canola oil
  • 1 cup brown sugar
  • 1/2 cup granulated white sugar
  • 2 eggs
  • 2 tablespoons skim milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 3 cups of old-fashioned oats
  • 1 3/4 cups whole-wheat flour
  • 1 teaspoon baking soda
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup unsweetened coconut

 
Directions:

 Heat oven to 350 degrees F.

In a large bowl, combine the oil, brown sugar, granulated sugar, egg whites, milk, vanilla and salt. Beat on medium speed for 2-3 minutes or until the sugars have dissolved.

 In a separate bowl, combine old-fashioned oats, flour, baking soda, coconut, and chocolate chips. Stir until just combined. Add to liquid mixture. Transfer to a lightly greased 13×9 inch baking pan.

 Bake 15-20 minutes until golden. Remove from oven and allow to cool until firm. Cut into squares and store tightly covered

Well, I’m so impressed with the individual wrapped bars. I think you need to do a video showing us how to do that! I think I’d love the chocolate coconut ones best too!

I am a school cook and my daughter brings her lunch every day too… I don’t blame her though some days. Our school got 9 25 lb bags of pinto beans and they are getting beans with everything until the end of the school year! Those bars look great :)

I hardly ever make cookies.. but the last time I did make anything with chocolate chips was when we took the kids to Disneyland last October. I made something similar and the kids loved them.. kinda like an energy bar. My kids would love if I made these! :)

Megan, you are too funny. Live long enough to be an embarrassment to your kids, isn’t that what I read on a bumper sticker some while back?

These bars, though, would be the envy of anyone’s lunch. Perfect for the lunch sack or anytime, I’d say.

These look great! I would have freaked out if my parents put a “homemade with love” sticker…haha. Luckily I’m older now and realize that it’s a parents way of saying “I love you” :)

Aw, right! Oatmeal cookies but in bar form! Yes! I can’t wait to give these a try. My mom and one of the twins loves oatmeal raisin cookies but because I don’t like baking cookies it’s rare that they get good homemade ones. Thanks, Megan!

Hi again Megan. There was something about this that got me to get up and make it. I halved the rceipe, and made it with a few changes. Have just run it past the kids as they’ve returned from school. They LOVE it! Thanks for a great rceipe!

I used 2 whole eggs. My friend used 2 egg whites. Original recipe called for 4 egg whites, But I used 2 whole eggs! :)

I made these. The family (except my pain in the neck) and I really enjoyed them! The were especially good warmed up and topped with ice cream, too! :) I might have had one like that this morning for breakfast. Kinda like oatmeal with milk! :)

Hi Megan, these look pretty good. Hey, I pack a lunch everyday too but not for Amy for Michael. He is getting pretty sick of roast beef sandwiches everyday (I wish someone made me one everyday). Since you mentioned that all the kids love your sandwiches, what kind do you make? Do you have any other suggestions for sack lunches besides sandwiches??? Michael always gets teased about having “another” sandwich.

A Very yummy recipe, but the bars were too sweet for my taste . . . and I definitely have a sweet tooth ;-) I don’t claim to understand the science behind baking, but I’m wondering if it’s possible to eliminate the granulated sugar or at least lessen the total amount of sugar added, and how that would affect the recipe. Any suggestions?
