I made this bread twice. Once with scallions and once with chives. Both times with cheddar!
But a Jack cheese would be good here too!
The first time I used ½ whole wheat flour and ½ white flour, a little bit of oats, and lots of cheddar and scallions. The second loaf, which I liked the best, had all white flour, and chives!
I used the Fat Tire beer. This is one of the most popular beers the Belgium Brewery offers. And this is the one you would most likely see in my refrigerator. It was perfect for this light beer bread. It gave it a wonderful yeasty fragrance while baking in the oven and you can taste the slightly bitter taste of the hops.
This is a super easy quick bread and would be excellent served with something hearty like soups and stews, or served with strong cheeses. But don’t think it’s just limited to hearty grits, it’s quite pleasant toasted on it’s own!

| Cheese and Chive Beer Bread |

- 2 cups flour
- 1/2 cups rolled old fashioned oats
- 3 Tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 12 oz bottle of beer
- 1/2 cup grated sharp cheddar cheese
- 1/4 cup chopped chives
- Preheat oven to 400 degrees
- Whisk first 6 ingredients (dry ingredients) in large bowl just until thoroughly incorporated.
- Add beer and mix just until all ingredients are moistened.
- Stir in cheese and chives
- Pour batter into greased 8 1/2 x 4 1/2 inch loaf pan.
- Bake 30-40 minutes or until toothpick comes out clean.

I’ve been loving beer breads, lately, and this sounds gorgeous! The cheese and chives are the perfect accent flavors – I just want to toast a slice and slather it with butter!

Although I’m not much of a beer drinker, I love the way it adds such great flavor to breads, soups, and other dishes. Cheese and homemade bread are two of my favorite things to eat, and this recipe is most definitely right up my alley!
