<p>My assignment for the Secret recipe Club this month was the fabulous blog, <a href="http://tangerineskitchen.blogspot.com/" target="_blank">Tangerine&#8217;s Kitchen.</a>  I had fun browsing around her blog and<a href="http://tangerineskitchen.blogspot.com/p/index-of-recipes.html" target="_blank"> all her great recipes.</a> She&#8217;s a Daring Baker, so there are many sweets, right up my alley!</p>
<p>I was to find a recipe, make it, and blog about my results. Meanwhile, somewhere out in Cyberspace, someone is making one of my recipes to blog about. But I think I already told you about all that club stuff, right? If I haven&#8217;t, you can get all the info right here, at the clubs own website, <a href="http://secretrecipeclub.com/" target="_blank">The Secret Recipe Club.  </a></p>
<p>Anyway, back to this Zebra cake. When I got my assigned blog, I almost immediately came across<a href="http://tangerineskitchen.blogspot.com/2011/07/zebra-cake.html" target="_blank"> this Zebra Cake. </a>I knew I had found my recipe. Although, I have to admit, the cookie called <a href="http://tangerineskitchen.blogspot.com/2008/07/ladies-kisses.html" target="_blank"> Ladies&#8217; Kisses </a>, gave that cake a run for it&#8217;s money. But I stuck with my first choice and put the cookies on my &#8220;must Make&#8221; list.</p>

<p>You would think, since I have wanted to make this cake for some time now, that I would make the simple cake, an leave it at that.</p>
<p><em>But no,</em></p>
<p>I decided to try to make it into cupcakes.</p>

<p>My first problem was</p>
<ol>
<li>converting the recipe from metric to U.S. measurements.  But I managed. I think!</li>
<li>I  didn&#8217;t have Castor sugar, so I went with granulated sugar.</li>
<li>I also didn&#8217;t get a lot of layers because I used too much batter in each layer. I was trying to do a tablespoon of white batter and 2 teaspoons of chocolate batter but before I knew it, my cupcakes were full.</li>
</ol>
<p>But I still have  a tasty marbled cupcake that I like to refer to as my Black and White Cupcakes. Because really, there is nothing zebra about them other them the cheap paper liner I used to bake them in.</p>
<p>I topped them with some vanilla bean frosting and a few chocolate pearls.</p>
<p>They were pretty.</p>

<p>Here is a blurry picture of the inside of my daughter&#8217;s cupcake.<em> It was smiling!</em> I wanted to cut open every single cupcake to find a good one, but&#8230;</p>
<p>People don&#8217;t like when you give them  cupcakes that have been cut in half. <em>  (Sigh</em>)</p>
<p>The zebra cake?</p>
<p>Yea, even though I used the recipe for these cupcakes, I still want a shot at those stripes.  I have not removed it from the &#8220;must make&#8221; list.</p>
<p>At least I know it&#8217;s tasty!</p>

<li class="ingredient">2 cups flour</li>
<li class="ingredient">1 tbsp baking powder</li>
<li class="ingredient">4 eggs</li>
<li class="ingredient">1 cup sugar</li>
<li class="ingredient">1 cup milk</li>
<li class="ingredient">1/2 cup butter, melted and cooled</li>
<li class="ingredient">1/2 cup vegetable oil</li>
<li class="ingredient">2 tsp vanilla extract</li>
<li class="ingredient">2 tbsp cocoa powder</li>
</ul>

<ol>
<li class="instruction">Preheat the oven to 350F.</li>
<li class="instruction">Line cupcake .pan with cupcake ,iners.</li>
<li class="instruction">Combine the flour and baking powder in a medium bowl.</li>
<li class="instruction">Combine the eggs and sugar in a large mixing bowl and beat with an electric mixer on high speed until thick and pale, about 5 minutes.</li>
<li class="instruction">With the mixer on low speed, stir in the milk, butter, oil and vanilla, scraping down the sides of the bowl.</li>
<li class="instruction">Stir in the flour mixture,</li>
<li class="instruction">Transfer a third of the batter into another bowl and whisk in the cocoa powder.</li>
<li class="instruction">Place 1 tablespoons of the vanilla batter into the centre of the cupcake liner and let it stand for a few seconds so it spreads out slightly. Place 1 teaspoon of the chocolate batter right on top of the vanilla and wait another few seconds until it spreads. Continue alternating vanilla and chocolate until the cupcakes are about 3/4 full.</li>
<li class="instruction">Bake until the cake is set and a toothpick comes out clean, about 20 minutes.</li>
<li class="instruction">Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely.</li>
<li class="instruction">Frost and enjoy!</li>

In fact, she cooks a lot like I do. We have very similar taste.  Proof? We have made several of the exact same recipes, like <a href="http://thefridayfriends.blogspot.com/2010/07/ihcc-bacon-wrapped-dates.html" target="_blank">Bacon Wrapped Dates</a>,  and one of my favorite Fall foods, <a href="http://thefridayfriends.blogspot.com/2008/11/i-went-maverick-this-holiday.html" target="_blank">A Pumpkin Roll</a>.</p>
<p>I had no trouble finding a recipe to make.  I found a bunch, like<a href="http://thefridayfriends.blogspot.com/2011/06/crackeroon-pie-and-amaretto-cream-puffs.html" target="_blank"> Crackeroon Pie and Amaretto Cream Puffs!</a></p>
<p>I also stumbled upon a recipe for a bar called Mud Hen Bars. Like Debbie, I had never heard of this treat. I love a fresh, chewy meringue cookie so when I saw this bar had a layer of meringue on top, I knew I had found my recipe.</p>

<p>This bar starts with a cookie crust layered with marshmallows and chocolate chips. I added a bit more of the goodies because  I felt the entire bottom should be covered with marshmallow and chocolate goodness.</p>

<p>This recipe was adapted from the <a href="http://www.meganscookin.com/no-bake-peanut-butter-pie-with-chocolate-chips">No-Bake Peanut Butter Pie recipe</a> I made last Summer.</p>
<p>It&#8217;s easy, fast, and sinful!</p>
<p>Being a no-bake dessert, It would be <em>perfect</em> for the hot dog days of Summer.</p>
<p>Or, with the chocolate hazelnut combo going on, it would be a <em>delicious </em>Valentine dessert.</p>

<h1>Nutella Cream Tart</h1>
<p>adapted from Martha Stewart<br />
makes one 9-inch round tart</p>
<p>For the Crust:</p>
<ul>
<li>25-30 chocolate wafers, crushed</li>
<li>6 Tablespoons unsalted butter, melted</li>
<li>Pinch of salt</li>
</ul>
<p>For the Filling:</p>
<ul>
<li>1 3/4 cups heavy cream, divided</li>
<li>1 cup nutella</li>
<li>3/4 cup (6 ounces)cream cheese, softened</li>
<li>1/3 cup plus 2 Tablespoons sweetened condensed milk</li>
<li>dark chocolate shavings, for garnish</li>
</ul>
<ol>
<li>Give the chocolate wafer cookies a whirl in a food processor until fine  crumbs,</li>
<li>Add the melted butter and a pinch of salt and mix thoroughly,</li>
<li>Pour the graham cracker and butter mixture into a 9-inch tart shell  with a removable bottom. Press the mixture along the sides of the tart  pan and along the bottom until evenly coated. Carefully place the tart  pan in the freezer while you prepare the filling.</li>
<li>To make the filling combine the Nutella, softened cream cheese  and sweetened condensed milk in the bowl of an electric mixer fit with a  paddle attachment. Blend the three ingredients until thoroughly  incorporated, but don’t over blend.</li>
<li>In a separate bowl, whip 3/4 cup of heavy cream to soft peaks.</li>
<li>Add the whipped cream to the Nutella mixture and fold together  until well incorporated.</li>
<li>Remove the tart pan from the freezer and spoon in the Nutella  filling. Spread evenly.</li>
<li>Whip up the remaining cup of heavy cream to stiff peaks</li>
<li>spread on top of the  filling.</li>
<li>Refrigerate for at least two hours, or overnight.</li>
<li>Top with chocolate shavings</li>
<li>Enjoy!</li>

<p>In fact, I made these bad boys twice in two days. Although through no  fault of my own, these  fresh and easy little munchies just seemed to  disappear.</p>

<p>I know a lot of you are freezing in you neck of the woods but here in  California, it&#8217;s been beautiful.</p>
<p>I  made the first batch to take to the races on Saturday. But it was too  warm of a day, and I knew they would melt.</p>

<p style="text-align: center;">EASY: just melting chocolate and cream cheese together, then stir in the coffee. They were not to heavy on the coffee flavoring, but they had just enough! You can either dip them in melted chocolate or roll them in Cocoa power.</p>

<p style="text-align: center;">I packaged up a half dozen of each kind and  I also added in a few chocolate covered coffee beans to make more of a variety pack. Packaged in a pretty box, they were all ready to be delivered.</p>

<h1>Chocolate Coffee Truffles</h1>
<p><em>Sorry, I cant remember where I got this recipe, but when I find it, I&#8217;ll update it!</em></p>
<ul>
<li>2 packages (12 ounces <em>each</em>) Semi-Sweet Morsels</li>
<li>1  package (8 ounces) cream cheese, softened</li>
<li>3  tablespoons instant coffee granules</li>
<li>2  teaspoons water</li>
<li>1 pound melted dark chocolate candy  coating for dipping or unsweetened cocoa powder for rolling.</li>
</ul>
<h2>Directions</h2>
<p>In a microwave-safe bowl, melt chocolate chips; stir until  smooth. Add the cream cheese, stirring till melted. Combine coffee and hot water and added to truffle mixture, stirring till smooth.</p>
<p>Chill about 20-30 minutes or until firm enough  to shape. Shape into 1-in. balls and place on waxed paper-lined baking  sheet. Chill for 1-2 hours or until firm.</p>
<p>Then you can either roll in unsweetened cocoa powder or,</p>
<p>In a microwave, melt chocolate coating; stir until smooth.   Dip balls in chocolate; allow excess to drip off. Refrigerate until chocolate has set.</p>

<h2>Double Chocolate Chunk Cookies</h2>
<p>Recipe found at <a title="chocolate chunk cookies" href="http://www.mykitchenaddiction.com/2009/11/double-chocolate-chunk-cookies/" target="_blank">My Kitchen Addition</a></p>
<p>2 cups all purpose flour<br />
1/2 cup unsweetened cocoa powder (I used Scharffen Berger)<br />
1 teaspoon salt<br />
1/2 teaspoon baking soda<br />
1 cup unsalted butter, softened<br />
1/2 cup granulated sugar<br />
1 cup dark brown sugar, packed<br />
2 teaspoons vanilla extract<br />
2 eggs<br />
12 ounces semisweet chocolate chunks (I used Scharffen Berger)</p>
<ol>
<li>In a large mixing bowl, cream together the butter and sugars .</li>
<li>Add the vanilla extract, and beat in the eggs one at a time.</li>
<li>In a bowl, whisk together the flour, cocoa powder, salt, and baking soda.</li>
<li>Gradually mix in the dry ingredients, beating until well incorporated into the batter</li>
<li>Add the chocolate chunks,</li>
<li> Refrigerate for at least one hour.</li>
<li>Meanwhile, preheat the oven to 350°F.</li>
<li>Grease your baking sheets (or line with parchment).</li>
<li>After the batter has been refrigerated, drop tablespoons of batter onto the prepared cookie sheets.</li>
<li>Bake for 14 – 16 minutes.</li>

<p>My first week&#8217;s cookie is a no-bake. But instead of your original version, containing  peanut butter,</p>

<h2>No-Bake Nutella Cookies</h2>

<li>1/2 cup butter</li>
<li>1/2 cup milk</li>
<li>1 &amp; 3/4 cups sugar</li>
<li>1/2 cup cocoa</li>
<li>1 teaspoon vanilla</li>
<li>1/2 cup Nutella</li>
<li>3 cups rolled oats</li>
</ul>
<ol>
<li>In a saucepan over medium-high heat, combine butter, milk, sugar, and cocoa. Bring to a boil, stirring constantly.Reduce heat and continue to boil for 3 minutes, still stirring.</li>
<li>Remove from heat and add Vanilla.</li>
<li>Add Nutella.</li>
<li>Add oats and mix well.</li>
<li>Drop quickly onto  waxed paper and allow cookies to cool and set.</li>

<p>Before The Hubby&#8217;s family came up for <a href="http://www.meganscookin.com/sopas-and-my-portuguese-family/" target="_blank">Our Big Portuguese Bash</a>, we had a week of R&amp;R with some friends at Doran Beach.</p>
<p>We stayed in our 5th wheel down by the jetty, #104.</p>
<p>It&#8217;s referred to as &#8221;The Honeymoon Suit&#8221;!</p>

<p>We have to make reservations a year in advance to get this premo site. But it&#8217;s so worth it!</p>

<p>With coastal weather being uncertain, I waited for the perfect day to host my party!</p>
<p>The wind had died down to a soft sea breeze and patches of blue  littered the sky.</p>
<p>I felt very lucky having the perfect seaside weather because I have been there before, when they have had very strong winds.</p>

<p>After spending the day golfing, our famished guys returned to camp, presented with their very own little cheese platter.</p>

<p>How cute are these?</p>
<p>There was a Lavender Swiss, a Rosemary Cheddar and a cranberry dessert like cheese. The little baguettes slices were awesome! One little toast had a Pear Paste with Blue Cheese while the other was a Quince Paste with Lavender Cheddar. An umbrella held a few rolled up slices of salami.</p>
<p>Of course we opened our first bottle of wine at this point! A Columbia Crest Chardonnay!</p>

<p>Our first course was Crab Cakes and I paired it with the recommended Chardonnay.</p>

<p> I wanted to actually make crab cake lollipops for the appetizer, but they were to flaky and didn&#8217;t stand up to the challenge.</p>
<p>So I sprinkled them with some  Mediterranean Lemon Sea Salt  that were huge flakes. I love my gourmet finishing salts!</p>

<p>Our second course was a salad of fresh greens dressed in a balsamic vinaigrette. I added sliced pears, Blue cheese, and candied almonds, and served it with an ice cold Riesling.</p>

<p> For dinner we had<a href="http://www.corkandfork.mobi/recipes/Cedar_Planked_Salmon" target="_blank"> Cedar Planked Salmon with Merlot Reduction and Wild Mushrooms</a> served on a bed of Polenta Cakes. To ease things up on party day, I made the reduction sauce the day before.  I also used a mixture of dried mushrooms that I got from <a href="http://marxfoods.com/" target="_blank">Marx Foods </a>a while back. This was served with Columbia Crest Merlot.</p>
<p>Now,  just for the record&#8230; I know the above dish has some bad food styling going on and it&#8217;s a a bad photo to boot. You try cooking, styling, and photographing while starting on your 3rd bottle of wine. Let me tell you, this was a <span style="text-decoration: line-through;">delicious</span>  hard assignment.  But someone had to do it!</p>

<p>Isn&#8217;t that a mouthful? My sweet tooth didn&#8217;t complain, or anyone else for that matter.</p>

<strong>Molten Spiced Chocolate Cabernet Cakes<br />
</strong><em>Recipe by McCormick&#8217;s</em><br />
<em>Prep Time: 15 minutes</em><br />
<em>Cook Time: 15 minutes</em></p>
<p><strong>Ingredients:<br />
</strong>4 ounces semi-sweet baking chocolate<br />
1/2 cup  (1 stick)  butter<br />
1 tablespoon Cabernet Sauvignion or other red wine<br />
1 teaspoon vanilla Extract<br />
1 cup confectioners’ sugar<br />
2 eggs<br />
1 egg yolk<br />
6 tablespoons flour<br />
1/4 teaspoon  Cinnamon<br />
1/4 teaspoon  Ginger,<br />
1/8 teaspoon  Cloves, Ground (optional)</p>
<p><strong> </strong></p>
<p><strong>Directions:</strong><br />
1.  Preheat oven to 425°F.  Butter 4 (6-ounce)  custard cups or soufflé dishes.  I sometimes use a cupcake pan to make six smaller servings. Place on baking sheet.</p>
<p>2.  Microwave chocolate and butter in large microwavable bowl on HIGH 1 minute or until butter is melted.  Whisk until chocolate is completely melted.  Stir in wine, vanilla and confectioners’ sugar until well blended.  Whisk in eggs and yolk.  Stir in remaining ingredients.  Pour batter evenly into prepared custard cups.</p>
<p>3.  Bake 13 to 15 minutes or until sides are firm but centers are soft.  Let stand 1 minute.  Carefully loosen edges with small knife.  Invert cakes onto serving plates.  Sprinkle with additional confectioners’ sugar.  Serve immediately.</p>
<p><strong>Make Ahead:</strong> <br />
The chocolate mixture can be prepared up to 10 hours ahead of time.  Pour the batter into prepared custard cups; cover with plastic wrap and refrigerate.  Bring to room temperature for 30 minutes before baking.</p>
<p><strong>Brown Sugar Vanilla Bean Ice Cream</strong></p>
<p>Makes 1 quart</p>
<p>2 cups heavy whipping cream<br />
 2cups half and half or whole milk<br />
1cup (packed) dark brown sugar, divided<br />
1 vanilla bean, split lengthwise<br />
6 large egg yolks</p>
<ol>
<li>Combine heavy whipping cream, half and half, and 3/4 cup sugar in heavy large saucepan. Scrape in seeds from vanilla bean; add bean. Bring cream mixture to simmer over medium heat, stirring until sugar dissolves.</li>
<li>Meanwhile, whisk yolks and remaining 1/4 cup sugar in large bowl until very thick, about 2 minutes.</li>
<li>Gradually whisk hot cream mixture into yolk mixture. Return mixture to saucepan. Stir over medium heat until custard thickens coats the back of a spoon, about 3 minutes. Do not boil.</li>
<li>Strain custard into large bowl set over another bowl of ice and water. Cool custard completely, stirring often, about 15 minutes. Cover and chill overnight.</li>
<li>Process custard in ice cream maker according to manufacturer&#8217;s instructions.</li>

<p>I got this recipe from my mother in law years <span style="text-decoration: line-through;"> and years</span> ago. We have  made it a 1000 times and it&#8217;s still our favorite. So easy to make that a child can do it.</p>
<p><strong>Trust me, this I know!</strong></p>
<p>It also makes a whole lot, but they will disappear very quickly.</p>

<h2>No Bake Chocolate Peanut Butter Bars</h2>
<p>1 cup butter<br />
1/2 cup peanut butter (smooth or chunky)<br />
3 cups powdered sugar<br />
2 cups graham cracker crumbs<br />
1 bag semi sweet chocolate chips<br />
Melt together butter and peanut butter. Add powdered sugar and graham cracker crumbs. Mix well.<br />
Spread to corners in a rimmed cookie sheet, pressing down firmly.<br />
Melt chocolate chips. Spread on top of peanut butter mixture. Let set.</p>
<p>For easy cutting, score bars before chocolate gets to hard. refrigerate till completely firm.</p>

<p style="text-align: center;">I used roses because nothing says &#8220;I love you, mom&#8221; quite like a rose. Martha Stewart suggested you use a mint sprig.</p>
<p style="text-align: center;">. I was going to use a plastic straw to hold my flower, but the stem wouldn&#8217;t fit, so I just stuck it in. Be sure to use a non poisenous flower or one that isn&#8217;t sprayed with insecticide.</p>

<h2>Flower Pot Cakes</h2>
<p>Makes 6</p>
<ul>
<li>1/3 cup vegetable oil, plus more for pots</li>
<li>3/4 cup unsweetened cocoa powder, plus more for dusting</li>
<li>1 1/2 cups all-purpose flour</li>
<li>1 1/2 cups sugar</li>
<li>1 1/2 teaspoons baking soda</li>
<li>3/4 teaspoon baking powder</li>
<li>3/4 teaspoon salt</li>
<li>1 large egg, plus 1 large egg yolk</li>
<li>3/4 cup buttermilk</li>
<li>3/4 teaspoon pure vanilla extract</li>
<li><a href="http://www.marthastewart.com/recipe/quick-chocolate-frosting">Quick Chocolate Frosting</a></li>
<li>1/2 cup crushed chocolate wafer cookies (about 10), for garnish <span style="color: #ff0000;">(I used Oreos)</span></li>
<li>Multicolored pebble-shaped chocolate candies, for garnish</li>
<li>Mint sprigs, for garnish <span style="color: #ff0000;">(I used roses)</span></li>
</ul>
<p>Directions</p>
<ol>
<li>Preheat oven to 350 degrees. Brush inside of each flowerpot with oil, and line bottom with parchment paper round. Brush parchment with oil, and lightly dust with cocoa.</li>
<li>Sift cocoa, flour, sugar, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with the paddle attachment. Add egg and yolk, 3/4 cup warm water, buttermilk, oil, and vanilla; mix on low speed until smooth, about 1 minute.</li>
<li>Divide batter among prepared pots, filling each about two-thirds full. Transfer to a rimmed baking sheet. Bake, rotating sheet about halfway through, until a cake tester inserted into centers comes out clean, 45 to 50 minutes. Let cakes cool completely in the flowerpots on a wire rack.</li>
<li>Frost cakes with an offset spatula; sprinkle with crushed cookies. Top with candies; &#8220;plant&#8221; 1 mint sprig in each cake.</li>
</ol>
<h2><strong>Quick Chocolate Frosting</strong></h2>
<p>Makes about 3 cups</p>
<ul>
<li>3 1/2 cups confectioners&#8217; sugar</li>
<li>1 cup unsweetened cocoa powder</li>
<li>12 tablespoons (1 1/2 sticks) unsalted butter, softened</li>
<li>1/2 cup milk, room temperature</li>
<li>2 teaspoons pure vanilla extract</li>
</ul>
<h2>Directions</h2>
<ol>
<li>Sift sugar and cocoa together in a medium bowl. Whisk in butter, milk, and vanilla until smooth. Use immediately.</li>
